Wondering what I’ve been up to??? Yeah, yeah, you probably know.  Dealing with the move.  But guess what? I’ve got beautiful views to show you of my Saturday and a recipe :)  Yes!!! A RECIPE.  I have been itching to cook and make stuff for over a week.  It’s become part of me, I never thought that when I first started this blog I would get such joy from it.

This is the peace I had this weekend

 

I always loved cooking, baking, and crafts.  I thought this blog thing would just be a cool way to share the recipes I’ve collected, but man has it become so much more.  Now that I haven’t had the time (literally) to cook, let alone post, I’ve been craving it and missing it like crazy.  So when I found some extra time last Friday night to make the Rice Krispies I had been waiting to make, I jumped at the chance.  Well, actually I contemplated even making them.

At the beginning of January, I had made a “quick” trip to Target — Tarjaayyy— for something (can’t recall what now). Well, as I walked the aisle I came across a sale section. And low and behold there I saw the darn marshmallows I had been looking for during Christmas.  Those bastards were nowhere to be found when I needed them.  I cursed at them, and walked away.  Then I realized, I still had a huge box of Rice Krispie cereal from my Holiday inspired Rice Krispies treats.  Grrrr, fine, I gave in and bought the marshmallows.

So they had been sitting on my counter since then.  This Friday came around, and I found myself at home alone with plans to meet my friends the next day.  We had scheduled a “Girls Day” and I had mentioned bringing dessert.  So, thank them :)  I couldn’t let my girls down.  I got it together, and talked myself out of the feeling of spending the night as a couch potato.  I made them rice krispies!! Did you notice what kind of marshmallows they are? The gingerbread flavored marshmallows from Kraft.

So my saturday involved some peaceful views, girl chat, and lots of eating.  We had guacamole, chips, cheese, fruit, seafood, key lime pie, rice krispies, and banana bread! We ladies like to eat :)  Spent a beautiful day with my girls.  I enjoyed every minute of it, and took pics to save for my phone background.  The Keys are beautiful, you gotta make it there.

 

The rice krispies were yummy! They had a light taste of gingerbread, with a nice touch of chocolate and reese’s peanut butter chips :)

 

Gingerbread Rice Krispies Treats

  • 3 tbs butter
  • 1 (10 oz) bag of gingerbread flavored marshmallows
  • 6 cups of rice krispies cereal
  • 1/2 cup of reese’s peanut butter chips
  • 1/2 cup of semi-sweet chocolate chips

Grab a medium sized sauce pan, melt the butter in low heat.

Add the marshmallows and stir constantly until melted.  Add the cereal 2 cups at a time.  Butter a baking dish, and spread the marshmallow mixture into the dish.  Coat your hand with butter and press the cereal down, lightly.  Sprinkle with the peanut butter chips and chocolate chips.  Set aside for 15 minutes.

  2. I’ve never thought about using the flavored marshmallows to make rice crispie treats – definitely something to keep in mind when I see them!

    LOL, love that you finally found the marshmallows, they sound delicious in your rice krispie treat:-) I used to go to The Keys when I visited my Grandfather. It is my favorite place to visit. I always tell my hubby we need to get him there, it is on my bucket list for sure:-) Hugs, Terra

  5. I’m glad you found the time to bake a little something. It’s very therapeutic, even with our super busy schedules.

    And these treats look fabulous. Although I don’t think I’ll be able to find gingerbread flavored marshmallows at my local Target :/

    I can’t find these marshmallows anywhere, not even during the holidays – elusive little dudes! No matter, I can live vicariously through your RC treats using them :) Yum! BTW – LOVE the Keys, floated out on a raft in heavenlt oblivion at Anna Maria key a few years ago. Going to Key West soon!
