Allow me to introduce you to my mom’s dominican cake. I’ve been eating this since FOREVER!!! I do love this cake, it’s perfectly moist, and crumbly, it lends itself to being soaked, covered with some marmalade or eaten alone. We have this cake for any occasion my mom made cake for, all my cousins, neighbors, co-workers have enjoyed a slice or two. We had this cake so much, that we actually asked ma’ not to make it for a while.  Yes we did! we asked for no more cakes.

After a few dry months, I now miss it. I was so thrilled the other day when I stopped by and the smell of cake baking filled the house. YUM!!  I confirmed which cake we could eat (she was making it for the neighbor, she’d kill us if we cut into the wrong cake) grabbed a plate, cute a slice and ate it. Plain delicious goodness.

Recipe

1lb all-purpose flour
lb sugar
lb margarine
1/2 teaspoon salt
1 1/2 tbsp baking powder
8 eggs
8 oz milk
1 teaspoon vanilla
1 teaspoon rum

Preheat oven at 350.

Beat the sugar and margarine. In a bowl sift all the dry ingredients together.

Add the eggs, vanilla, and rum to the sugar mixture. Add one heaping spoon of the dry mixture, followed by some milk. Continue until all the ingredients are mixed. Pour into greased cake pans. Makes 2 (9″inch) cakes.

Bake at 350 until the center comes out clean when poked with a knife. Approximately 45 minutes.

    Hi there! Just had one question about this recipe. Are the 8 eggs whole or 4 yolks & 4 whole? I noticed a lot of other dominican cake recipes separate some of the eggs. I’m going to be trying this recipe and just want to be sure I do it correct. Thanks!!
